X'mas Giveaway! Crackling, Crispy, Melt-in-your-mouth Roast Pork!

Fancy having a twist to your X'mas meal this year? Instead of the usual roast beef / ham, how about a nice crackling, crispy, melt-in-your-mouth roast pork! And not just any roast pork but one that is by Uncle G's Handmade?

If you have not heard, Uncle G's Handmade has been gaining popularity in the local pop-up scene with long snaky queues, all to sample that perfect marriage of crispy skin with juicy and moist meat. And being the foodie that I am, you can only imagine how pleasantly surprised I was when I realised that Uncle G is none other than my ex schoolmate of ... well, ahem *cough cough* let's just say some years. :p

Here's sharing a bit more about Uncle G and his handmades and a GIVEAWAY at the end of the post!

Me: Hi Uncle G! I know how your name came about but for those who are new to your yummy treats, can you please share a bit about you, your name and your 'stall'?

Uncle G: “G” has the same pronunciation and intonation as “pig” in Cantonese.  Since our signature product is crispy roast pork, I find that this name actually fits in quite well!


Me: Why roast pork; all things why this particular meat and style? It could have been for eg Guinness stewed beef? :p

Uncle G: It all started after watching a roast pork video I found on Youtube by Marco Pierre White.  Also, most of the roast pork stalls we have locally are either too dry, too salty or the skin is not crispy enough.  Hence, I was very inspired to make my very own version.


Me: What is the hardest part to achieve when cooking this signature roast pork?

Uncle G: The hardest part was in achieving a balance of crispy skin and meat that is tender and moist which can take up to quite a few hours to achieve. I also roasting the meat personally to ensure that each order is not rushed and the taste is consistent.

Me: What do you like most about Uncle G's signature roast pork? What's is that unique difference that makes it so special?

Uncle G: When you take a bite, first you’ll hear the crunch of the crackling in your head, followed by the tender, juicy meat.  The fats also melt in your mouth, bringing together the flavours of crunchiness, juiciness, tenderness and saltiness.


Me: Let's chat about something else. :) What is/are the hardest dish(es) that you have ever prepared? Why?

Uncle G: Unbelievable as it sounds, it’s Fish and Chips.  I’m still trying to perfect the batter and get the perfect chips. 

Me: What is your favorite dish / meal?

Uncle G: I love egg dishes.  Favourite meal will have to be a sashimi bowl I once had in Hokkaido which was chock full of the freshest seafood I had ever tasted!


Me: Lastly, what do you think would be a nice Christmas treat? 

Uncle G: Definitely a 1.5kg of our Crispy roast pork which will certainly be a nice Christmas treat! (Coincidentally, roast pork is a traditional Danish Christmas dish known as Flæskesteg)!

Festive Fare - with a bit of everything...

This Christmas has been rather tame for us because the little one is sick - she caught a bug and basically was down throughout the Christmas period with a fever and a nasty cough.

Our typical Christmas would usually include visiting where we will visit hub's side of the family to catch up and all will bond and chat over a meal (in many cases 3 - 4 meals) over the course of the day. The fare would usually include lots of meat, Devil's curry, salads, turkey and wines too.

This year, we did not do much at all except to partake in a potluck at Dumpling's Great Grandma's place. Great Grandma as you may have been aware was down with a massive stroke and was hospitalised for quite a while and she was finally discharged late last week.

So, our food for this year had no typical Eurasian dishes but it's yummy nonetheless with a little bit of Chinese (the soup!) and a little bit of that! (The sambal and the Christmas cuts!)

~ a good salted veg soup needs to be stewed long enough where the vegetables are soft and the soup flavourful. The top layer of oil should also be skimmed off and usually, the meat will literally fall off the bones


Beef stew
~  This was really yummy as the gravy were all absorbed into the meat. The meat was tender and the gravy had the right dash of pepper and the right amount of spices to it


And of course, which Christmas dinner would be complete without the cold cut platter! 


This has to be one of my all time favourite dishes which my mum-in-law cooks - sambal prawns!
~ The paste is spicy yet very fragrant and I usually mix this in with my rice (and also help myself to round 2!) 


And tada! LOL, mixed into a local nasi padang style! 


I wish that we had done more visiting and I have the full on meals to show you but unfortunately, it did not happen. Nonetheless, it was a nice gathering as we had a chance to chat with Great Grandma (who is now wheelchair bound) so I am thankful for that. :)

A day of Kindness

For the month of December, one of the things I wanted to do was a simple “pay-it-forward” kind of idea. I ended up being busy with Advent Activities and did not manage to carry through the "pay-it-forward" intention. Then a fellow blogger mummy Dee Loh reached out in her Spread the Kindness linky where blogger mums can share their “kindness stories”.

When I first read other inspiring stories from mummies such as Angeline Sim who helped out in a community project with her little girl Dana and another kind hearted mummy who even helped to clean an elderly’s house, I was atad intimidated. I mean wow, these mummies mean serious business!

So I was stuck. For many days. Because I seriously did not know what to share and what to blog about. After mulling over it for a few days, it suddenly came to me that I was being ridiculous! Surely (I told myself) spreading kindness need not be this hard or elaborate! I am sure many of us do pockets of kind acts in one way. 

With that, I decided to share “A Day of Kindness” with all of you, where small little acts will also bring a smile to someone’s face. :)

9am:
Waiting for an appointment and I was early so I headed to the supermarket to buy a drink. An elderly man needed help to read off a label on a box of sparkling grape juice (he was illiterate in English). Camera shy, he waved his hand when I whipped out my trusty iPhone. Though no photos, his grateful smile is enough to warm me up. (I am smiling as I am typing this)



11am: 
I held a door open for a few delivery guys

1:30pm:
I treated a fellow colleague to a cup of teh tarek! Here's Tini with her Cheshire-happy-with-my-teh-tarek-smile!




3:20pm:
Gave a colleague a lift to a new office site

7:00pm:
Wrapped all the Christmas presents for Dumpling’s teachers which she gave out the next day

9:30pm:
Handed our helper her Christmas present


Though it was not in anyway "big", but the small gestures and thoughts do add up as my day was simply warmer with their smiles. :)

Merry Xmas 2012!

Dumpling and I are taking a short break as we join in the festivities and well, basically having a ball of a time! We will be back soon!

In the meantime, have a super duper HERO-IFIC holiday and for my Christian friends, may we continue to rejoice and seek peace in the Lord! Here's to a blessed year ahead!

Dumpling is showing interest in writing since a few months back and hence from a homeschool front, our English focus has been to read tons, discuss and explore whatever ideas / thoughts there are from the stories and expand her vocabulary list.

Advent Activities - Arthur Christmas DVD Review

Being a Nazi mum, Dumpling has very little TV time since young. Except for the short doses of Baby Signing Time and Signing Time DVD series, I was extremely strict with turning on the TV at home and also at my parents’ place where Dumpling spends some time at.


I only relaxed the rule a bit about a year plus back when I let her watch series such as Sid the Science Kid and The Magic School Bus because of her inquisitive nature where she started asking me about how things work. It was also sometime this year that I allowed her to watch movies but we would very often break it down into 2 parts.

During this Christmas period, I was looking around for some suitable DVD titles and I chanced upon Arthur Christmas at a local DVD store and I decided to give it a try! 




Synopsis
The story centers on Arthur Christmas, son of Santa who discovered that a package was left out for a child and how he ‘jumps through the hoops’ to deliver the present to that child, just in time, for Christmas.

Heartwarming and peppered with adult humour, we like this simple story as it touches on simple values such as ‘responsibilities’ and ‘promises’. It is also a great family movie (suitable for ages 3 and up because of the adult humor) with a modern Christmas high-tech twist (watch the movie and you’d understand) that is great for this festive season.

Advent Activities: Tinsel in the Truth - Favorite Activities for Week 1 :)

We are into week 2 of our Tinsel in the Truth journey and we still are loving it! Here's our favourite sessions from week 1. :)

Reading: Luke 1:5-25


Here we made Zechariah with simple materials available at home. The craft actually calls for bubble for Zechariah's mouth but we did not have any hence we decided to use a "bandaid" concept instead. :p

It was a good discussion on obedience and trust in God for Dumping and I :)



Reading: Luke 1:26-38

Here we made Gabriel the Angel as he was the messenger in bringing the news to Mary. We used the remains of some leftover wrapper for this craft. :) I love that I could recycle all these little odds and ends of supplies at home and turn them into something meaningful and fun for Dumpling.

Again, it was a great discussion as we compare the reaction between Zechariah and Mary.

Advent Activities - STICKY CHEWY OREOS!

Are you a sticky chewy chocolate fun? Do you love the chewiness in dessert but would love a bit more crunch / bite to it? I do not have a sweet tooth so it was a big surprise that I love this little sweet snack so much that between Dumpling and I, we polished off about 1/4 of the snack in less than 3 days! Best of all, it is a NO BAKE recipe, all done in under 15 mins, which you can easily do with the kiddos!

Here's the gathering list:
1) 2 packets of marshmallows
2) 2 packets of Oreos Cookies N Cream
3) 1 Block of Butter (we used salted)


 1. Place 1 - 1.5 packets of the Oreo into a zip lock and use a rolling pin to smash up the Oreos. Do not pound / smash it to a powdery form - the idea is to have chewy crumbs

 


2. Place the 2 packets of marshmallows + 3 tablespoons of butter into a Microwave friendly pot. Heat on high for 1.5 to 2 mins. Check regularly to prevent it being 'burnt'. The marshmallows should puff up like below - not melted into a liquid form. You will need to stir it to achieve a consistent texture. I had to do this on high setting twice, each around 1.5 mins.


3. Once marshmallows are done, mix in the cookies crumbs by folding it in. Then place it in an oiled baking tray. Let it cool.


Once cooled (under 2 hours), you can then cut it out in small blocks


Place it in a simple jar, tie it with a nice ribbon and add a gift tag!


Tada: side view! Look how good it looks - the perfect mash of chewy yet crumbly yummilicious good!


** The Oreos can be replaced with other cookies - Chocolate Chip, etc. I chose Oreos because it is not as sweet as chocolate chip cookies. The rest of the steps are still the same. If the cookie has a tendency to crumble easily, just ensure that you do not roll/pound it for too long. :)
